Kulcha Naan or Kulcha Roti?

Kulcha is often compared to naan and other types of Indian flatbread, but it has its own unique characteristics. While naan is typically made with yeast and cooked in a tandoor (clay oven), the kulcha recipe uses a leavened dough that can be cooked on a skillet or tawa. This versatility makes it a staple in many households across India.

Ingredients for Kulcha Roti

To make authentic kulcha bread or kuchal roti, you will need the following ingredients:

• 2.5 cups all-purpose flour (maida)

• ¾ teaspoon salt

• 2 to 2.5 teaspoons sugar

• ½ teaspoon baking powder

• ¼ teaspoon baking soda

• 4 tablespoons yogurt (curd)

• 2.5 tablespoons oil or ghee

• Approximately ¾ cup water (adjust as needed)

• Nigella seeds or sesame seeds (for topping)

• Extra flour for dusting

Instructions

• Preparing the Dough: Start by mixing the dry ingredients in a large bowl. Combine the all-purpose flour, salt, sugar, baking powder, and baking soda. Create a well in the centre and add the yoghurt and oil. Gradually incorporate water into the mixture while kneading to form a smooth and supple dough. Once combined, cover the dough with a damp cloth and let it rest for about two hours to allow it to leaven.

• Shaping the Kulcha: After resting, knead the dough lightly again and divide it into small balls, about the size of a golf ball. Flatten each ball slightly and sprinkle some nigella seeds or sesame seeds on top. Using a rolling pin, roll each ball into a circle approximately 6-7 inches in diameter. Ensure that the thickness is similar to that of paratha—neither too thin nor too thick.

• Cooking the Kulcha: Heat a skillet or tawa over medium-high heat until hot. Place one rolled kulcha on the skillet and cook for about 30 seconds until bubbles start to form on the surface. Flip the kulcha over and cook for another minute or so until it starts to puff up. At this stage, you can apply some oil or ghee on both sides if desired. Flip again as needed until golden brown spots appear.

• Serving Suggestions: Kulchas are best served hot with various accompaniments such as chhole (chickpeas), saag (mustard greens), or any spicy curry of your choice. The combination of kulcha with these dishes is not only traditional but also enhances the overall dining experience.

Variations of Kulcha

While plain kulcha is delicious on its own, there are several variations worth exploring:

• Butter Kulcha: Brush freshly cooked kulchas with melted butter for added richness.

• Aloo Kulcha: Stuff kulcha rotis with spiced mashed potatoes before rolling them out for a hearty option.

• Amritsari Kulcha: A stuffed version that often includes potatoes and spices, popular in Amritsar.
