Chorchori is one of the most beloved Bengali recipes that you will find in any Bengali home. It is a dry, lightly spiced stir-fry of mixed vegetables cooked in mustard oil with a crackling panch phoron tempering. The name chorchori broadly refers to any preparation in which more than one vegetable (and sometimes a protein, mostly fish) is cooked in this style.
The defining technique of chorchori is in how the mustard oil is handled. It must be heated to the smoking point before cooking begins. This process removes the raw, eye-watering pungency of the oil and transforms it into something milder and aromatic. The panch phoron is the main flavour driver in this Bengali recipe, added to the hot oil immediately after. It crackles and releases the combined fragrance of five whole spices – fenugreek, nigella, cumin, black mustard, and fennel.
From there, the Bengali recipe of chorchori is about patience as the vegetables cook slowly in their own moisture on a low flame until the potatoes are fully tender.
