Katachi Amti is a festive Maharashtrian-style thin curry made using the leftover water from boiled chana dal (used in puran poli). It’s lightly spiced with goda masala, balanced with jaggery and tamarind, and topped with a flavourful tadka and a sprinkle of coconut. It’s a great way for a zero-waste approach to cooking and contains a lot of nutrients.
